This is a spicy and exotic lentil dish that is enjoyed in India and throughout the world. This fiber and protein abundant meal is sure to leave you energized. It is especially satisfying with the cool peppermint yogurt, providing antioxidants to the body. Enjoy in the afternoon to keep you going, or in the evening to keep you full till the morning. Serves 6.
- In a large pot, heat oil over medium heat.
- Mix in onions, carrots, and garlic until softened.(10 minutes)
- Put in the curry, then the lentils. Mix.(1 minute)
- Add all of the broth and bring to a boil.
- Cover, set heat to low, and let simmer for about 1 hour and 15 minutes. Stir occasionally.(1 hour)
- Season with salt and pepper and prepare to make the yogurt.
- In a small bowl, thoroughly mix the yogurt, mint, cilantro, and basil.(2 minutes)
- Add salt and pepper to taste.
- Add the lentil soup into serving bowls and top with cumin, parsley to garnish, and the mint yogurt.(2 minutes)
- Serve and enjoy!
