Ingredients

  • 2 bananas (ripe)
  • 2 tablespoons of HerbaZest Lucuma Powder
  • 2 cups of whole milk (or non-dairy)
  • 2 cups of all-purpose flour
  • 2 tablespoons of butter (or olive oil)

Directions

These banana crepes with lucuma powder are a delicious way to kickstart your day. Quick and easy to make, they require just a few simple ingredients. Thanks to the light, natural sweetness from ripe bananas and
lucuma, these crepes can be stuffed with a variety of your favorite fillings, such as peanut butter, homemade chocolate spread, whipped cream, and fresh fruits.

  1. Add all ingredients to a blender and process until smooth and creamy.(2 minutes)
  2. Heat a lightly oiled frying pan over medium-high heat. Pour or scoop the batter onto the pan, using approximately 1/4 cup for each crepe. Tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Remove and repeat with the remaining batter.(20 minutes)
  3. Fill the crepes with your favorite filling. Enjoy them warm!(3 minutes)
