Crunchy Cookies with Nuts & Sacha Inchi Seeds

  • 1/2 cup of pistachios (roughly chopped)
  • 1/2 cup of sunflower seeds
  • 1/2 cup of pumpkin seeds
  • 1/2 cup of almond flour
  • 1 cup of coconut flakes
  • 3/4 cups of maple syrup
  • 1 teaspoon of olive oil


These easy-to-make cookies offer a delightful balance of flavors and textures.   1. Place all the ingredients in a bowl and give them a mix until everything is well combined. (3 minutes)
  2. Line a large cookie sheet with parchment paper. Scoop about a tablespoon's worth of the mixture and place it on the baking sheet. Shape it into a cookie and flatten it slightly with the back of a spoon. Repeat with the rest of the mixture. (5 minutes)
  3. Bake at 350°F (176°C) for 10-12 minutes. Take out of the oven and set aside to cool completely. The cookies will harden as they cool. Enjoy! (10 minutes)
