  • 1/2 cup of peanut butter

  • 1 teaspoon of vanilla extract
  • 1 egg
  • 1/4 teaspoon of ground cinnamon
  • 1/4 teaspoon of baking soda
  • 1 1/2 teaspoons of baking powder
  • 1/4 teaspoon of salt

Directions

These quick and easy cookies are made with a blend of nutritious ingredients, including sacha inchipeanuts, and oats, which provide protein, fiber, and healthy fats. With a soft, chewy interior and a dense texture, these cookies are both satisfying and delicious. Ideal for a nutritious snack, they combine great taste with wholesome benefits.

  1. In a large bowl, mix together the instant oats, ground cinnamon, baking soda, baking powder, salt, and sacha inchi powder.(3 minutes)
  2. In a separate bowl, mix the peanut butter, maple syrup, vanilla extract, and egg until smooth.(3 minutes)
  3. Add the wet ingredients to the bowl with the dry ingredients. Mix until well combined. The mixture will be sticky.(2 minutes)
  4. Place the mixture in the fridge for about 30 minutes.(30 minutes)
  5. Scoop out about a tablespoon's worth of dough. Roughly shape it into a ball with your hands, place it on a parchment paper-lined baking sheet, then flatten it slightly into a cookie shape. Repeat with the rest of the dough.(5 minutes)
  6. Bake at 350°F (176°C) for 8-10 minutes, or until the cookies are lightly browned.(10 minutes)
