  • 1 teaspoon of baking soda
  • 1 cup of water (boiling)
  • 1/2 cup of HerbaZest Quinoa Flakes
  • 1 1/2 cups of all-purpose flour
  • 2/3 cups of whole milk (or non-dairy)
  • 1 teaspoon of vanilla extract
  • 1 tablespoon of vinegar
  • 1/4 cup of olive oil
  • 2 chicken eggs
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of walnut (roughly chopped)
  • 1 cup of shredded coconut (lightly toasted)

Directions

This wholesome and naturally sweetened date & walnut bread is bursting with delicious flavors. Each bite offers a perfect balance of chewy dates, crunchy walnuts, shredded coconut, and the added nutrients of flaked quinoa. Whether it's for breakfast or a quick snack, this nutritious delight is perfect for any time of day.

  1. Start by roughly chopping the dates and placing them in a bowl. Cover them with boiling water, add baking soda, and give it a mix. Set it aside while you make the batter.
  2. Grease a loaf pan and line it with parchment paper. Set it aside.
  3. To a large bowl, add the milk of choice and mix it with the vinegar. Then add the eggs, olive oil, and vanilla extract. Give it a mix.(3 minutes)
  4. Mix in the soaked dates. And then add the flour and quinoa flakes. Give it a mix.(3 minutes)
  5. Mix in the chopped walnuts and shredded coconut.(2 minutes)
  6. Transfer the batter to the prepared loaf pan. Sprinkle it with some quinoa flakes. And run a knife through the center of the batter lengthwise a few times.(3 minutes)
  7. Bake at 350°F (176C°) for an hour. Let cool completely before slicing. Enjoy!(1 hour)
