Ingredients

  • 1 onion (chopped)
  • 2 celery (stalks; thinly diced)
  • 1 carrot (diced)
  • 2 tablespoons of parsley (chopped)
  • 5 tomato (diced)
  • 1 cup of bean (any white variety; canned, drained)
  • 1 teaspoon of oregano (dried)
  • 1/2 teaspoon of black pepper
  • 2 tablespoons of olive oil
  • 6 cups of water (or veggie stock)
  • 1 teaspoon of basil (dried)
  • Salt (to taste)
  • 1/2 cup of pasta (uncooked; gluten-free if needed)

  1. Over medium heat, sauté onions until soft.(3 minutes)
  2. Mix in zucchini, carrots, celery, and green beans, and cook for 3 minutes.(3 minutes)
  3. Add water or veggie stock, tomatoes, beans, and the spices. Mix well, cover the pot, and bring it to a boil.(5 minutes)
  4. When it boils, lower the heat to low and simmer for 20 minutes.(20 minutes)
  5. When veggies are tender, add pasta and cook until it softens, stirring occasionally.(10 minutes)
  6. Serve immediately with fresh parsley.
