  • 3 tablespoons of Unsalted Butter
  • 6 Carrot (peeled and sliced)
  • 1 tablespoon of Ginger (peeled)
  • 3 Bitter Orange (zest)
  • 2 cups of Water
  • 1 Basil (sprig, to garnish)

  1. In a soup pot, at medium heat, melt the butter and cook carrots and onions until softened, and until onions are translucent but not brown.(5 minutes)
  2. Add stock, water, ginger, salt, pepper, and orange zest. Bring to a simmer, cover, and let cook until carrots are softened.(20 minutes)
  3. Remove orange zest and pour soup into a blender, filling up to 1/3 of the jar. Blend until completely smooth, garnish with basil, and serve.(5 minutes)
