  • 3 tablespoons of Unsalted Butter
  • 6 Carrot (peeled and sliced)
  • 1 tablespoon of Ginger (peeled)
  • 1 Bitter Orange (peel)
  • 2 cups of Water
  • 1 Parsley (sprig, to garnish)
  • 6 Carrot (peeled and sliced)
  • 2 cups of Vegetable broth

Directions

Very few foods are as related to wellness, home-cooking, and comfort as soups. For those seeking a soup that will regulate their digestive system and lower inflammation at the same time it warms the heart, this ginger and carrot soup may be the answer.

  1. In a soup pot, melt the butter and cook carrots and onions on medium heat until translucent .(5 minutes)
  2. Add the stock, water, ginger, salt, pepper, and orange peel. Bring to a simmer, cover, and let cook until carrots are softened.(20 minutes)
  3. Remove orange peel and pour soup into a blender. Blend until completely smooth, garnish with parsley, and serve. You may leave about a 1/3 of the soup chunky if you prefer.(5 minutes)
