  • 1/2 pound of Dandelion (greens, torn)
  • 1/2 Onion (white, chopped)
  • 1/4 tablespoon of Basil (dried)
  • 1/4 teaspoon of Black Pepper (to taste)
  • 1/4 teaspoon of Salt (to taste)
  • 1 Bell Pepper (yellow, sliced)
  • 1 Tomato (chopped)
  • 1/3 cup of Cherry Tomatoes (chopped)
  • 1 tablespoon of Lemon Juice

Directions

If you're bored with iceberg lettuce, try to mix things up a bit by adding dandelion greens to your salads. The herb has a high content of vitamins A and C as well as iron, fiber, and calcium. It also has the ability to draw out toxins, reduce inflammation, and assist digestion.

  1. Toss together dandelion greens, tomatoes, radish slices, yellow bell pepper, and red onion in a medium bowl.(2 minutes)
  2. Flavor with salt, pepper, and basil.
  3. Drizzle with lemon juice and enjoy!

This salad is a side dish, but it can also make for a refreshing entree if paired with hearty protein, like tofu, chickpeas, or beans, among others.
