  • 1/2 pound of Dandelion (greens, torn)
  • 1/2 Onion (white, chopped)
  • 1/4 tablespoon of Basil (dried)
  • 1/4 teaspoon of Black Pepper (to taste)
  • 1/4 teaspoon of Salt (to taste)
  • 1/2 Radish (thinly sliced)
  • 1 Bell Pepper (yellow, sliced)
  • 1 Tomato (chopped)

Directions

A little substitution goes a long way. Not to offend iceberg lettuce, but if you're looking to mix it up, try the herbalist way. Dandelion has a high content of vitamin A, vitamin C, iron, fiber, and calcium; it also has the ability to draw out toxins, reduce inflammation and assist digestion. Turn to dandelion and get your friends and family to join you.

  1. Toss together dandelion greens, tomatoes, radish slices, yellow bell pepper, and red onion in a medium bowl.(2 minutes)
  2. Flavor with salt, pepper, and basil.
  3. Serve fresh and enjoy.

This salad is a side dish, but it can also make for a refreshing entree if paired with grilled fish.
