Low in bad saturated fat but high in dietary fiber and healthy unsaturated fat, avocados are as nutritional as they are healthy. This unusual and colorful summer salad makes for a perfect light lunch or exotic side dish.
- Dice the avocado, papaya, and grapefruit to preferred size.(4 minutes)
- Toss the fruits, walnuts and vinaigrette in a bowl, on top of lettuce leaves and let marinade for a few minutes.(5 minutes)
- Mix the marinated veggies and remaining vinaigrette on top of the fruit, mix thoroughly and serve.(1 minute)
Although this salad can be stored in an airtight container and refrigerated to keep for several days, the avocado may discolor. For best results, serve fresh.
