Avocado and Grapefruit Salad

Ingredients
- 2 tablespoons of Lemon (juice)
- 1/2 Onion (red, sliced)
- 1 Avocado (peeled, pitted, and sliced)
- 2 teaspoons of Olive Oil
- 1/4 teaspoon of Salt
- 2 teaspoons of Apple Cider Vinegar
- 1/4 cup of Walnut
- 2 cups of Lettuce (washed and torn)
- 1 cup of Grapefruit (sliced)
- 6 Tomato (halved)
- 1/4 teaspoon of Black Pepper (or to taste)
- 1/4 teaspoon of Cumin (ground)
Directions
A fruit unlike any other, avocado is a fibrous and heart-healthy way to bring creamy texture to any dish. In this light and refreshing summer fruit salad, the mildness of avocado offsets the zesty grapefruit perfectly, making for a flavorsome and vitamin-filled meal.
- Peel and section the grapefruit. Pour lemon juice over the avocado slices to prevent discoloring. Keep the leftover juice to the side.(1 minute)
- In a large salad bowl, toss the avocado, grapefruit, lettuce, and onions.(3 minutes)
- In a small container, mix the leftover lemon juice, apple cider vinegar, olive oil, salt, cumin, and pepper. Pour dressing over the salad and toss before serving.(2 minutes)
- Top the mixture with the cherry tomatoes and walnuts, and enjoy immediately.(1 minute)
