  • 1 teaspoon of vanilla extract
  • 1/2 banana (sliced)
  • 2 tablespoons of whipped coconut cream
  • 2 tablespoons of pomegranate (or more)

Directions

If you enjoy classic overnight oats, try these overnight kaniwa flakes to change things up a bit and explore new flavors. Kaniwa, also spelled caƱihua, is a protein-rich Andean pseudocereal with excellent amounts of iron and dietary fiber. When flaked and hydrated with milk, kaniwa takes on a soft texture that is easily digestible and perfect for a nutritious breakfast.

  1. Place the flakes in a bowl and mix it with milk, vanilla extract, and honey. Cover and place in the fridge for at least four hours or overnight.(8 hours)
  2. When ready to serve, check the texture of the flakes and add a little more milk, if desired. Then transfer to a jar and garnish with banana slices, whipped coconut cream, and pomegranate seeds. Enjoy!(2 minutes)

Garnishing these overnight kaniwa flakes with coconut cream and pomegranate is only one of the many ways to enjoy them. Try other seasonal fruits, Greek yogurt, maca chocolate cream, vegan lucuma cashew cream, cacao nibs, shredded coconut, and more!
