  • 1 tablespoon of Greek yogurt
  • 1 1/3 cups of Almond Milk
  • 3/4 cups of All-purpose flour (or gluten free)
  • 1 Chicken Eggs
  • Salt (a pinch)
  • 1 tablespoon of Baking powder
  • 1 teaspoon of Vanilla extract

  1. In a medium bowl, mix all the dry ingredients: flour, lucuma and baking powder, and a pinch of salt.(2 minutes)
  2. Add Greek yogurt, vanilla, egg, and almond milk. Whisk until smooth and set aside for about 5-10 minutes.(10 minutes)
  3. Fry your pancakes as usual.(10 minutes)
  4. Enjoy immediately with maple syrup or honey.
