  • Lucuma
  • Salt (a pinch. Optional)
  • 1 tablespoon of Baking powder
  • 1 teaspoon of Vanilla extract (optional)
  • 1 tablespoon of Greek yogurt
  • 3/4 cups of all-purpose flour (regular or gluten free)
  • 1 1/3 cups of Almond Milk
  • 1/2 cup of Lucuma (powder)
  • 1 egg

  1. In a medium bowl, mix all the dry ingredients: flour, lucuma and baking powder, and a pinch of salt(2 minutes)
  2. Add Greek yogurt, vanilla, egg, and almond milk. Whisk until smooth and set aside for about 5-10 minutes(10 minutes)
  3. Prepare your pancakes as usual(10 minutes)
  4. Enjoy immediately with maple syrup or honey
