This quick and easy-to-make roasted red pepper feta dip is great with crackers and fresh veggies. It also makes for a delicious spread on healthy sandwiches. Roasted bell peppers have a slightly sweet, charred flavor that is balanced out by the saltiness of the feta cheese.
- Roast the bell peppers in the oven at 410°F (°C) for 40 minutes until the skin is charred.(40 minutes)
- Remove the peppers' skin and place them in a blender along with the rest of the ingredients. Process until creamy and smooth. Season to taste with salt and pepper.(3 minutes)
