If you like to start your days with oatmeal, this is a great recipe to change things up a notch. Both blueberries and acai berries are an incredible source of antioxidants and fiber. What is surprising to most people is that acai also contains great amounts of healthy fats and protein, making this blueberry acai oatmeal is a perfectly balanced and wholesome breakfast.
- Add all of the ingredients, except for the acai powder, to a saucepan and cook it over medium heat until the mixture starts to boil.(3 minutes)
- Then lower the heat to low, mash some of the blueberries so that they release their juices, and cook the mixture for another 3 minutes until it thickens.(2 minutes)
- Turn off the heat and mix in the acai powder. Add a splash of milk if the porridge seems too thick.(2 minutes)
- Transfer to bowls, garnish with favorite toppings, and enjoy!
