  • 1/2 cup of HerbaZest Quinoa Flakes
  • 1 banana (+ for garnish)
  • 1/2 teaspoon of ground cinnamon
  • 2 tablespoons of pecan (crushed + for garnish)
  • 3/4 cups of whole milk (or non-dairy)
  • 2 tablespoons of maple syrup (or more to taste)
  • salt (a pinch)

Directions

Overnight quinoa flakes make for a truly nutritious breakfast, especially when they taste like banana bread. Quinoa is a great source of easily-digestible, complete protein, while bananas offer a richness of minerals, like potassium and manganese. Flavored with maple syrup and cinnamon, these flakes will make you feel you're eating dessert for breakfast.

  1. Mash the banana with a fork.(2 minutes)
  2. Add the rest of the ingredients and give it a good mix. Transfer to individual jars, put the lid on, and store in the fridge overnight (or at least two hours).(8 hours)
  3. Before serving, adjust the sweetness and texture by adding more maple syrup or milk, if necessary. Top with banana slices, cinnamon, and pecans. Enjoy!
