  • 2 teaspoons of ground cinnamon
  • 2 tablespoons of walnut (chopped for garnish)
  • 4 tablespoons of chia (seeds)
  • 1 cup of whole milk (or almond/soy milk)
  • 2 tablespoons of honey (agave or maple syrup)

Directions

With a delicious aroma of a freshly baked apple pie, these apple cinnamon amaranth flakes will help you start your day on the right foot.

Amaranth has an impressive nutritional profile with high amounts of essential minerals and vitamins, like B complex, manganese, and copper. Consuming it in flake form makes for a easily-digestible and protein-rich meal. Apples are some of the most popular fruits around the world, recognized for improving digestion and aiding weight loss, among other benefits. Spiced with cinnamon, which is known to help lower blood sugar levels, this healthy breakfast might be one of your favorite options.

  1. Place the apples, cinnamon, and honey in a pan in a saucepan, add a dash of water, and cook until soft. Gently crush some of the apple pieces with the fork, while leaving others whole.(5 minutes)
  2. Transfer the apples into an airtight jar and add the rest of the ingredients. Mix well, put the lid on, and place in the fridge for several hours or overnight. You may also reserve a tablespoon of the apples and use it as a topping.(3 minutes)

Before serving, stir your apple cinnamon overnight amaranth flakes to check their consistency. If they seem too thick, you may stir in a little more milk. Top with crushed walnuts or other preferred nuts. Enjoy!
