Ingredients

  • 2 teaspoons of anise (extract)
  • 2 1/2 cups of flour (all purpose, unbleached)
  • 6 tablespoons of canola oil (or vegetable)
  • 1 1/2 cups of white sugar
  • 6 chicken eggs
  • 1 tablespoon of baking powder
  • 1/2 teaspoon of salt

Directions

These cookies, very similar to biscotti, hold a special flavor. The sweet and healthy anise herb provides a licorice-like flavor, which simultaneously aids in digestion. Share this light, unique, and flavorsome cookie with friends over your favorite coffee or tea. 

  1. Preheat oven to 375° F (190° C).
  2. Stir together flour and baking powder in a medium-size bowl and set aside.(2 minutes)
  3. Beat eggs in a large mixing bowl until fluffy and light.(2 minutes)
  4. Add sugar gradually while beating.(2 minutes)
  5. Add the oil and anise extract and stir.(2 minutes)
  6. Gradually stir in the dry ingredients until well mixed.(5 minutes)
  7. Take the resulting dough and spread it over a lightly floured surface.(4 minutes)
  8. Form patties, approximately 1/2 inch thick, and place on a greased baking sheet.(3 minutes)
  9. Place cookies in the over and bake for 25-30 minutes, checking near the end in order to make sure they do not become overly brown or burnt.(30 minutes)

After letting them cool, store in an airtight container or enjoy fresh!
