Roasted Garlic Cannellini Bean Dip

  • Cannellini beans (2 15-ounce cans; drained and rinsed)
  • Garlic (1 head)
  • 1 tablespoon of Rosemary (finely chopped + for garnish)
  • 3 tablespoons of Olive Oil (+ for drizzling)
  • 1 tablespoon of Water (hot)
  • 3 tablespoons of Lemon Juice
  • Black Pepper (to taste)
  • Salt (to taste)

Directions

When roasted, garlic takes on a mellow, sweet flavor that goes perfectly with white beans, such as cannellini. This creamy dip requires only a few wholesome ingredients, but it offers an incredible flavor combination and a good dose of important nutrients, such as protein and healthy fats.

  1. Trim the top of the garlic bulb, drizzle it with olive oil, and roast in at 400°F (200°C) for 30 minutes.(30 minutes)
  2. Squeeze out roasted garlic cloves, add them to the food processor along with the rest of the ingredients, and process until smooth and creamy. Thin the dip out with a little bit of water if it seems too thick.(5 minutes)
  3. Transfer to a bowl, drizzle with olive oil, and sprinkle with rosemary. Enjoy!

You can serve your roasted garlic white bean dip with vegetables, like cucumbers and carrots, pita bread, crackers, or baked nacho chips. You can also use it as a spread on your healthy sandwiches.
