  • Green onions (1 bunch, sliced)
  • 1 cup of Spinach
  • 1 cup of Basil
  • 2 cloves of Garlic
  • 1 Shallots (small)
  • 1/4 cup of Olive Oil
  • 6 tablespoons of Lemon Juice (or juice of 2 lemons)
  • 2 tablespoons of Rice vinegar
  • 1/3 cup of Nutritional yeast
  • 1/4 cup of Walnut
  • 1 teaspoon of Salt

Directions

The highly popular green goddess salad has seen many transformations throughout the years. This particular version is tangy, crispy, and loaded with flavorful nutrients. Finely chopped cabbage, cucumbers, and herbs are coated in a pesto-like dressing, creating a delicious and wholesome salad.

  1. In a large bowl, mix together the cabbage, green onions, cucumbers, and chives.(2 hours)
  2. To a blender, add the rest of the ingredients to make the dressing: lemon juice, olive oil, rice vinegar, shallot, garlic, spinach, basil, nutritional yeast, salt, and walnuts. Process until smooth and creamy.(3 minutes)
  3. Add the dressing to the bowl with cabbage and mix well. Enjoy!(2 minutes)

This green goddess salad is very flavorful on its own, but you can also enjoy it with tortilla chips or crackers, like these amaranth flour crackers. For a more filling meal, serve it alongside a protein source of your choice.
