  • 6 cups of arugula
  • 10 figs (fresh; sliced into wedges)
  • 1/4 cup of walnuts
  • 2 ounces of goat cheese
  • 5 tablespoons of balsamic vinegar
  • 5 tablespoons of olive oil
  • 3 tablespoons of honey (or more to taste)
  • Salt (to taste)

Directions

This quick and easy arugula salad has the perfect combination of flavors and textures: slightly spicy arugula is topped with soft figs, creamy goat cheese, and crunchy walnuts, all drizzled with a delicious sweet and tangy balsamic honey vinaigrette. This wholesome salad is wonderful on its own or as a flavorful side dish.

  1. To toast the walnuts, heat them in a dry skillet over medium heat for 1 or 2 minutes until they become fragrant. Set aside.(2 minutes)
  2. In a small jar, add the olive oil, honey, balsamic vinegar, and salt. Put the lid on and shake the jar until everything is combined.(1 minute)
  3. In a large bowl, add the arugula and drizzle the vinaigrette over it. Toss to combine.(2 minutes)
  4. Top the arugula with toasted walnuts, crumbled goat cheese, and figs. Enjoy right away!(2 minutes)
