Garlic Sautéed Spinach

Ingredients

  • 1 pound of spinach (baby spinach or regular spinach with stems trimmed)
  • 4 cloves of garlic (thinly sliced)
  • 2 tablespoons of olive oil
  • Black pepper (to taste)
  • Salt (kosher; to taste)
  • 1 tablespoon of lemon juice (optional)

Directions

This sautéed spinach with garlic takes almost no effort to make. It's also an easy way to eat more spinach and enjoy its fiber, vitamins, and minerals. Whether you eat it as an aromatic side dish with protein of choice or have it on bread with poached eggs, you'll love the flavor and texture it offers.

  1. Add the garlic and olive oil to a cold deep skillet. Put on heat on and let the garlic infuse the oil for a couple of minutes. Keep an eye on it as it burns easily.(2 minutes)
  2. When the garlic is fragrant and very lightly browned, add in the spinach. Toss it in the oil and put the lid on for the spinach to wilt.(3 minutes)
  3. Take off heat, season to taste, and drizzle with the lemon juice, if using. Enjoy right away!(1 minute)
