Ingredients

  • 2 pounds of sweet potatoes
  • 1 tablespoon of thyme (fresh leaves + more for garnish)
  • 4 tablespoons of butter (unsalted)
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of ground black pepper

Directions

In this festive recipe, thin sweet potatoes slices are layered with butter and thyme and baked until the edges are crispy and the centers are tender. Flavorful and aromatic, these sweet potatoes stacks make for an easy yet elegant side dish for the holidays.

  1. Preheat the oven to 400°F (200°C). Lightly grease a 12-tin muffin tin.
  2. Peel and slightly slice the sweet potatoes using a knife or a mandolin.(5 minutes)
  3. Add the potatoes to a large bowl. Add the melted butter, thyme, salt, and pepper. Using your hands, gently toss everything together, ensuring that the butter coats each potato slice.(5 minutes)
  4. Stack the potato slices in the prepared muffin tin. Bake for 35-40 minutes, or until the potatoes are tender and golden brown on top.(40 minutes)
  5. Take out of the oven and set aside to cool for a few minutes. Take the stacks out of the muffin tin, garnish with fresh thyme, and enjoy!(5 minutes)
