  • 1 cup of Red Quinoa Flour
  • 1 Banana (ripe)
  • 3/4 cups of Soymilk
  • 1 teaspoon of Vanilla extract
  • 2 teaspoons of Baking powder
  • 1 teaspoon of Ground Cinnamon
  • 1 tablespoon of Ground flax seeds (mixed with 3 TBS water for 10 min)
  • Salt (a pinch)

If you are ever in need of a quick and nutritious breakfast, these fluffy pancakes with quinoa will do the trick. Making them in the morning will save you time and give you the nutrients you need for a productive day. On top of that, their mild banana flavor will go with any of your favorite toppings!

  1. Process soymilk and banana in a blender.(2 minutes)
  2. Add the rest of the ingredients and blend until smooth.(2 minutes)
  3. Heat a nonstick skillet over medium heat. Rub a small amount vegan butter or oil onto the skillet and add one-fifth of the batter per pancake. Cook until the edges are golden bread, about 2-3 minutes per side. Repeat with the rest of the batter.(10 minutes)
  4. Garnish as desired and enjoy!
