Ingredients

  • 4 tablespoons of HerbaZest Sacha Inchi Powder
  • 1 cup of cashew
  • 1 1/4 cups of date (pitted)
  • 1 tablespoon of HerbaZest Cacao Powder
  • 1 tablespoon of chia (seeds)
  • 1 tablespoon of coconut oil
  • 3 tablespoons of whole milk
  • 1 tablespoon of coconut (shredded for garnish)

Directions

Simple yet filling, these energizing protein balls could work as a morning or afternoon pick-me-up. Sacha inchi is the best known source of plant protein for healthy muscle mass, while cacao is a great energy booster. Along with fiber-packed dates, nutritious chia seeds, and cholesterol-lowering cashews, this snack gives you everything you need to stay energized for longer.

  1. Soak the dates in hot water to soften them.(10 minutes)
  2. As the dates are soaking, crush cashews to the size desired for the protein balls.(2 minutes)
  3. Drain the softened dates from the water.(1 minute)
  4. Add the cashews, dates, coconut oil, cacao powder, sacha inchi powder, and chia seeds into a blender or food processor. Blend until you get a smooth consistency, adding milk as needed.(5 minutes)
  5. Wet hands with water and then roll the mixture into small balls.(5 minutes)
  6. Sprinkle with coconut shreds if desired.(1 minute)
  7. Store in the fridge until ready to eat.
