  • 1/4 cup of HerbaZest Amaranth Flour
  • 3/4 cups of All-purpose flour
  • 4 Chicken Eggs
  • 1 teaspoon of Baking powder
  • 1 teaspoon of Vanilla extract
  • 1 tablespoon of Coconut sugar (or brown sugar)

If you're guilty of making boring pancakes, you must try these delicious cottage cheese pancakes! They are tender and fluffy on the inside and slightly crispy on the outside. Unlike regular pancakes, they are packed with protein from amaranth and cottage cheese. Served with fresh fruit, they taste like eating dessert for breakfast.

  1. In a bowl, mix together the cottage cheese, eggs, and vanilla extract.(2 minutes)
  2. Add in the flours, sugar, and baking powder.(2 minutes)
  3. Fry on a greased skillet over medium heat until lightly browned on each side.(10 minutes)
