This quick and easy chickpea salad can turn an ordinary sandwich into a nutritious delight. It is as rich in vitamins and minerals as it is colorful. Chickpeas, for starters, is a good source of plant-based protein as well as manganese and copper. The selection of vegetables adds vitamin A in carrots and bell pepper's; vitamin K in cabbage; vitamin C in parsley; and folate in chives. Sunflower seeds give this chickpea salad a pleasant crunch and extra flavor. When served on a wholesome bread, this chickpea salad sandwich makes for a truly healthy lunch idea.

  1. Place the chickpeas in a large bowl and mash them with a fork. Leave some larger pieces for texture.(3 minutes)
  2. Add all of the ingredients to the chickpeas and give it a good mix.(3 minutes)
