In this quick and easy recipe, flaked amaranth is mixed with milk and homemade chia and blueberry jam, creating a refreshing and protein-packed breakfast. Soft and creamy, these overnight amaranth flakes with chia blueberry jam are the perfect on-the-go meal for busy mornings.

  1. Add the amaranth flakes, milk, and half of the chia blueberry jam to a jar and mix everything to combine. If you prefer more sweetness, you can add a sweetener of choice at this point.(3 minutes)
  2. Place it in the fridge for a few hours or overnight. Before serving, give the mixture a stir - you can add a splash of milk if it seems too dry.(2 minutes)
  3. Top the overnight amaranth flakes with the remaining chia blueberry jam. Enjoy!
