Ingredients

  • 2 bananas (mashed)
  • 1 cup of oats
  • 1 cup of HerbaZest Amaranth Flour
  • 1 teaspoon of baking powder
  • 1/4 cup of HerbaZest Cacao Powder
  • 1 cup of milk (or non-dairy)
  • 1 teaspoon of vanilla extract
  • 1/4 chocolate chip (+ 2 TBS for topping; optional)
  • 5 teaspoons of peanut butter

Directions

This baked oats recipe combines hearty oats with amaranth, peanuts, and cacao for a naturally rich source of protein, fiber, and healthy fats. With a creamy texture and deep chocolate flavor, it makes a nourishing breakfast or wholesome snack.

  1. Preheat the oven to 180°C (350°F). Lightly grease an oven safe baking dish.
  2. In the prepared dish, add the mashed bananas, oats, amaranth flour, baking powder, vanilla extract, cacao powder, and milk. Stir until well combined.(3 minutes)
  3. Fold in the chocolate chips.(1 minute)
  4. Add spoonfuls of peanut butter on top and gently swirl them into the batter. Sprinkle with extra chocolate chips if desired.(2 minutes)
  5. Bake for 20 minutes, or until set in the center. Let cool slightly before serving. Enjoy warm.(20 minutes)
