  • 3/4 cups of HerbaZest Amaranth Pop
  • 3/4 cups of granola
  • 1/2 cup of peanut butter
  • 1/4 cup of maple syrup
  • 3 tablespoons of coconut oil (divided)
  • 1 1/4 cups of dark chocolate chips

Directions

These amaranth pop granola bites covered in chocolate are the ultimate dessert for anyone who loves delicious, crunchy treats. They also happen to be packed with fiber, fats, and protein from amaranth, oats, coconut, and peanuts. If that wasn't enough, they also store well in the freezer which is perfect for those occasions when you crave a healthy snack.

  1. In a small saucepan, melt together the peanut butter, maple syrup, and 2 tablespoons of coconut oil until well combined.(2 minutes)
  2. Fold in the granola and amaranth pop.(2 minutes)
  3. Using a small cookie scoop, drop the mixture by spoonfuls onto a parchment paper lined baking sheet. Place in the freezer for half an hour.(30 minutes)
  4. Before taking the bites out of the freezer, melt the chocolate with 1 tablespoon of coconut oil. Then dip each bite in chocolate and place it back on the baking sheet. Place and store in the freezer.(3 minutes)
