Creamy and rather neutrally flavored, cooked millet is a wonderful base for bliss balls. It also offers protein, fiber, and key micronutrients. The balls' nutritional content is further enhanced by acai, which is an excellent source of antioxidants as well as healthy fats, complex carbs, and protein. These acai bliss balls with coconut are a great snack to have on hand.
- Cook the millet according to the package instructions until soft.(15 minutes)
- Transfer the millet to a food processor and add the rest of the ingredients. Process until a smooth and uniform paste forms. Adjust the sweetness to your liking.(5 minutes)
- Place the dough in a bowl and refrigerate it for half an hour.(30 minutes)
- Take it out of the fridge and roll it into balls. Then roll each ball in shredded coconut. Refrigerate for an hour before serving. Enjoy!(1 hour)
