  • 2 zucchini (sliced)
  • 9 ounces of Flour (wholemeal)
  • 2 tablespoons of Canola Oil (or olive oil, for frying)
  • 3 Chicken Eggs
  • 7 ounces of Whole Milk
  • 1/4 teaspoon of Salt
  • 125 milligrams of Water
  • 1 teaspoon of Cumin (powder)
  • 1 tablespoon of vegetable broth (powder)
  • 9 ounces of Mushrooms (portobello, sliced )
  • 1 teaspoon of Tamari (to taste)
  • 2.5 ounces of Halloumi cheese (grated)
  • 1 Tomato (chopped)
  • 1 tablespoon of Rosemary (fresh, chopped)

Enjoy the benefits of this protein-dense classic. Satisfying textures from the wholemeal crust and cheesy eggs are made complete by an array of healthy herbs and veggies. Zucchini's fiber content will support digestion, spinach will boost your energy levels, and cumin will keep you healthy. This a great dish any day of the week, but can be a special Sunday brunch meal.

  1. Preheat the oven to 350 degrees F.
  2. Grease a 25cm circular pie dish.
  3. First prepare the crust. In a bowl, mix together flour and salt.
  4. Stir in oil and water until fully combined.(2 minutes)
  5. Make the dough smooth by kneading.(3 minutes)
  6. Spraed the dough evenly in the prepared pie dish, prick some holes with a fork, and slightly bake.(10 minutes)
  7. While baking, start the filling by heating cooking oil of choice in a large pan.
  8. Stir in mushrooms and zucchini.(2 minutes)
  9. Mix in oregano, tamari, vegetable broth powder, black pepper, cumin, rosemary, and spinach until vegetables are tender.(3 minutes)
  10. Pour this filling into the partially baked crust and scatter the sliced tomatoes on top.
  11. Spread grated cheese evenly atop the tomatoes.
  12. Whisk together eggs and milk in a small bowl and evenly pour on top of the mixture.
  13. Bake.(40 minutes)
  14. Remove from oven once the quiche filling is set and slightly browned. Garnish with some parsley, let it cool for a bit and enjoy!(5 minutes)
