  • 9 ounces of Flour (all purpose)
  • 2 tablespoons of Canola Oil (+ for frying)
  • 7 ounces of Whole Milk
  • 1/2 cup of Water
  • 1 tablespoon of Vegetable broth (powder)
  • 2.5 ounces of Halloumi cheese (grated)
  • 1 teaspoon of Tamari (to taste)
  • 1 Tomato (chopped)
  • 1 Zucchini (small, sliced)
  • 1/2 cup of Spinach (chopped)
  • 1 teaspoon of Ground cumin

Directions

Enjoy the benefits of this protein-dense classic. Satisfying textures from a wholesome crust and cheesy eggs are made complete by an array of healthy herbs and veggies. Zucchini's fiber content will support digestion, spinach will boost your energy levels, while tomatoes will keep you healthy.

  1. Preheat the oven to 350 degrees F (176 degrees C).
  2. Grease a circular, 10-inch pie dish.
  3. To prepare the crust, mix together the flour and salt.(2 minutes)
  4. Stir in the oil and water until fully combined.(2 minutes)
  5. Knead the dough until smooth.(5 minutes)
  6. Spread the dough evenly in the prepared pie dish, prick some holes with a fork, and pre-bake for 8 minutes.(10 minutes)
  7. In the meantime, heat up a little bit of oil in a large skillet. Stir in mushrooms and zucchini, and cook them until the water has evaporated.(5 minutes)
  8. Mix in oregano, tamari, ground cumin, vegetable broth powder, black pepper, cumin, rosemary, tomatoes, and spinach and cook the mixture until vegetables are tender.(3 minutes)
  9. Pour this filling into the partially baked crust and garnish with grated cheese.(2 minutes)
  10. In a small bowl, whisk together eggs and milk and pour over the mixture.(1 minute)
  11. Bake for 40 minutes, or until the filling is set and slightly browned.(40 minutes)
  12. Garnish with parsley, let it cool a little before slicing, and enjoy!
