  • 3 zucchinis (medium)
  • 3 tomatoes (diced)
  • 2 cloves of garlic (minced)
  • 1 onion (large; thinly sliced)
  • 1/4 cup of mozzarella cheese (shredded)
  • 1 teaspoon of italian seasoning
  • black pepper (to taste)
  • salt (to taste)
  • 2 tablespoons of olive oil (for drizzling)
