Chia Carrot Buns with Amaranth Flour and Oats

Ingredients

  • 4 carrots (medium; peeled and shredded)
  • 5 tablespoons of chia seeds
  • 2 cups of oats
  • 1 1/4 cups of HerbaZest Amaranth Flour
  • 4 cups of all-purpose flour (or bread flour)
  • 1 3/4 teaspoons of instant yeast
  • 2 1/2 cups of water (cold)
  • 4 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 cup of sesame seeds (black & white for coating)

Directions

If you're intimidated by making bread or rolls, you must try these chia carrot buns. All you have to do is combine the ingredients the night before and bake them first in the morning. Besides being incredibly easy to make, these dense yet fluffy buns are packed with protein, fiber, and other nutrients from amaranth, oats, chia, and carrots.

  1. In a large bowl, mix together the cold water and instant yeast.(1 minute)
  2. Add in the olive oil, shredded carrots, and chia seeds. Give it a mix.(2 minutes)
  3. Add in the salt, amaranth flour, oats, and all-purpose flour. Using a wooden spoon, mix all of the ingredients together. Then using your hands, knead the dough for two minutes (it'll be sticky).(2 minutes)
  4. Cover the bowl with plastic wrap and keep it in the fridge overnight.(8 hours)
  5. The next day, scoop out the dough to form about 10-12 buns, roll them in sesame seeds, and place them on parchment paper (optional: you can brush the buns with an egg wash). Bake at 440°F or 225° (fan only) for about 20-23 minutes.(20 minutes)
  6. Take them out of the oven, place a damp towel over them, and let them cool down. Enjoy!
