Sweet Potato Waffles with Amaranth Flakes

Ingredients

  • 3/4 cups of sweet potato (mashed)
  • 3/4 cups of all-purpose flour
  • 1/2 cup of HerbaZest Amaranth Flakes
  • 1/2 cup of milk (or non-dairy)
  • 2 eggs
  • 2 tablespoons of olive oil
  • 3/4 teaspoons of ground cinnamon
  • 1 teaspoon of baking powder
  • Salt (a pinch)
  • Favorite topping (e.g. pecans, maple syrup, berries, banana slices, etc.)

Directions

These sweet potato waffles with amaranth flakes are light, fluffy, and naturally sweet. Mashed sweet potato keeps them moist, while amaranth builds up the texture and adds extra nourishment. The batter comes together easily in a blender for fuss-free preparation. Serve them warm with maple syrup, pecans, or your favorite toppings for a wholesome start to the day.

  1. Preheat the waffle iron. Lightly coat it with cooking spray or brush with oil.
  2. Add the mashed sweet potato, flour, milk, olive oil, eggs, baking powder, cinnamon, and salt to a blender. Blend until smooth and no chunks of sweet potato remain.(2 minutes)
  3. Transfer the batter to a bowl and gently fold in the amaranth flakes.(2 minutes)
  4. Pour about ⅓ cup of batter into the preheated waffle iron. Close and cook until golden and cooked through, about 6-8 minutes.(20 minutes)
  5. Enjoy warm with your favorite toppings.
