  • 2/3 cups of HerbaZest Quinoa Flakes
  • 1/2 teaspoon of vanilla extract
  • 3/4 cups of whole milk (or non-dairy)
  • 2 teaspoons of HerbaZest Lucuma Powder
  • Maple syrup (to taste; optional)
  • Favorite toppings (toasted coconut flakes, fresh fruits, crushed nuts etc.)


These overnight quinoa flakes are creamy, nutritious, and easy to make. They're naturally sweetened with lucuma, one of South America's favorite fruits whose compounds help regulate blood sugar levels. Rich in protein from quinoa, they're the perfect way to kick-start your day.

  1. Place all the ingredients in a jar, give it a mix, and refrigerate for at least 3-4 hours or overnight.(3 hours)
  2. When ready to serve, garnish with your favorite toppings and enjoy! If the mixture seems too dry, you can add a splash of milk to loosen it up.
