Ingredients

  • 2 cups of sweet potatoes (mashed; about 2 potatoes)
  • 1/2 cup of arepa flour (also called masarepa)
  • Salt (a pinch)
  • Favorite fillings (e.g., avocado, sautéed mushrooms, roasted bell peppers, mozzarella cheese)

Directions

Sweet Potato Arepas come together effortlessly, combining the slight sweetness of the sweet potatoes with the savory taste of corn, making them perfect for delicious fillings. They're a fantastic way to sneak in extra nutrients while enjoying a versatile, tasty dish for any meal of the day.

  1. Preheat your oven to 400°F (200°C). Lightly oil the sweet potatoes and poke them with a fork several times. Roast the sweet potatoes until they are tender, about 40-50 minutes. Allow them to cool slightly, then peel off the skin and mash the flesh in a bowl.(50 minutes)
  2. Add the arepa flour and a pinch of salt to the mashed sweet potatoes. Mix until a smooth dough forms.(5 minutes)
  3. Divide the dough into 4-5 equal sections, depending on the size you prefer. Flatten each section and shape them into circles.(5 minutes)
  4. Heat a lightly greased skillet over medium heat. Fry the arepas on both sides until they are slightly browned and crispy, about 3-4 minutes per side.(10 minutes)
  5. Let the arepas cool slightly, then cut them open and stuff with your favorite fillings. Enjoy!
