Ingredients

  • 12.3 ounces of tofu (silken (349g))
  • 4 tablespoons of HerbaZest Amaranth Flour
  • 1/2 cup of bell pepper (green; chopped)
  • 1 tomato (without seeds; chopped)
  • 1/2 cup of mushrooms (chopped)
  • 2 tablespoons of chives (chopped)
  • 2 teaspoons of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of onion powder
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of garlic powder
  • 3 tablespoons of nutritional yeast
  • 1/2 teaspoon of himalayan black salt
  • 1 teaspoon of baking powder
  • 2 teaspoons of potato starch
  • 1/2 cup of water

Directions

If you have a few extra minutes to spend on a delicious and healthy breakfast, you will absolutely love these tofu quiches. Tofu, being soy-based, is rich in protein, iron, and calcium as well as phytoestrogens for hormonal balance. They are enhanced with amaranth, a South American superfood seed, which adds a good dose of protein, vitamins, and minerals as well as a pleasant, earthy flavor. Combined with anti-inflammatory spices, like turmeric or garlic, and nutritious vegetables, like tomatoes and green peppers, these light and creamy tofu quiches with amaranth will give your body all it needs for a productive day. 

  1. Preheat the over to 350°F (176°C). Then place all of the ingredients in a blender, except for the amaranth flour, mushrooms, tomatoes, bell peppers, and chives. Process until well combined.(3 minutes)
  2. Transfer the mixture to a bowl and add the remaining ingredients. Mix well.(3 minutes)
  3. Spray the bottom of the muffin pan with a non-stick cooking spray or line it with muffin liners. Then add about 2 tablespoons of the batter to each muffin cup. Bake for 25-30 minutes.(30 minutes)
  4. Serve them warm or at room temperature. Enjoy!
