Ingredients

  • 1/4 cup of pistachios
  • 1/4 cup of HerbaZest Sacha Inchi Seeds
  • 9 ounces of dark chocolate
  • 7 ounces of cookies or biscuits
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of coffee (brewed)
  • 2 tablespoons of whole milk (or non dairy)
  • 6 tablespoons of butter (or coconut oil)
  • Powdered sugar (for coating)

Directions

With Italian and Portuguese origins, chocolate salami is an easy and fun dessert to make. It resembles a salami sausage, but it is made with dark chocolate and crunchy ingredients. Thanks to cacao, it's rich in antioxidants and minerals, while sacha inchi and pistachios enrich it with healthy fats and protein.

  1. Start by crushing the cookies. Roughly chop the pistachios and sacha inchi seeds.(5 minutes)
  2. In a double boiler, melt the chocolate and butter. Take the bowl off heat, and the rest of the ingredients. Give it a good mix so that everything is coated in melted chocolate.(5 minutes)
  3. Place half of the mixture on a piece of plastic wrap. Roll the plastic tightly to form a log. Scrunch the ends. Repeat with the remaining chocolate mixture; then place both logs in the fridge for 2-3 hours to set.(3 hours)
  4. When ready to serve, remove the plastic wrap and dust the logs with powdered sugar. Slice and enjoy!
