  • 1 1/2 cups of peanut butter
  • 1/3 cup of maple syrup (or honey)
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of coconut oil
  • 1 1/2 tablespoons of dark chocolate chips

Directions

Naturally sweetened and no baking required, they make a perfect snack or dessert that feels indulgent but fuels your day. Plus, these oat and puffed quinoa bars are freezer-friendly and easy to prep ahead.

  1. Grease and line a 9×9-inch pan with parchment paper.
  2. Microwave the peanut butter for 60 seconds, or until runny.(1 minute)
  3. Stir in maple syrup or honey, oats, puffed quinoa, and vanilla until well combined.(2 minutes)
  4. Press the mixture evenly into the prepared pan.(3 minutes)
  5. For the topping, melt chocolate chips with coconut oil in 30-second intervals, stirring until smooth.(2 minutes)
  6. Spread the chocolate over the bars. Refrigerate for 2–3 hours until firm.(2 hours)
