  • 1/4 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1/2 cup of HerbaZest Cacao Powder
  • Salt (a pinch)
  • 1/2 cup of chocolate chips (dark or semi-sweet; for coating)
  • 1 teaspoon of coconut oil (for coating)
  • 5 pistachios (chopped; for garnish)

Directions

These no-bake chocolate truffles are extra protein-rich thanks to cottage cheese and quinoa, blended into a smooth, fudgy bite with deep cacao flavor. Finished with a thick layer of chocolate and pistachios on top, they are wholesome, incredibly easy to make, and perfect to keep on hand for quick snacks or little cravings.

  1. Blend the cottage cheese until smooth and creamy using a blender or a food processor.(2 minutes)
  2. Add the maple syrup, vanilla, cacao powder, and salt, then blend again until fully combined.(2 minutes)
  3. Add the quinoa flakes and blend until a thick, uniform dough forms, scraping down the sides as needed.(2 minutes)
  4. Transfer the mixture to a bowl and chill for 30 minutes to firm up.(30 minutes)
  5. Scoop small portions and roll into bite-sized balls, then place them on a parchment-lined tray.(5 minutes)
  6. Refrigerate the balls for 15 minutes to help them hold their shape.(15 minutes)
  7. In the meantime, melt the chocolate chips with the coconut oil using a double boiler.
  8. Dip each ball into the melted chocolate to coat evenly, garnish with crushed pistachios, and refrigerate until the chocolate is fully set. Enjoy!(10 minutes)
