  • 1 cup of papaya
  • 1/4 cup of brown sugar (or other sweetener)
  • 1/2 cup of greek yogurt (or non-dairy)
  • 1 chicken eggs (or flax egg)
  • 1 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 2 tablespoons of coconut oil
  • 2 tablespoons of shredded coconut
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of lemon zest
  • 1/4 cup of almonds (chopped)

Directions

This papaya cake with lupin flour is a great option if you're looking for a quick and not overly sweet homemade dessert. Papaya and yogurt give this cake its lovely moist texture and key nutrients, while the flours from oats and lupin enrich it with quality protein and fiber.

  1. Start by preheating the oven to 350°F (176°C) and lining a 8x8-inch baking pan with parchment paper. Set it aside.
  2. In a large bowl, mix together the flours, baking powder, baking soda, sugar, shredded coconut, ground cinnamon, and lemon zest.(5 minutes)
  3. In another bowl, mash the papaya with a fork until smooth.(2 minutes)
  4. Whisk in the Greek yogurt, egg, and coconut oil and then add the mixture to the dry ingredients. Add in the almonds.(5 minutes)
  5. Transfer to the baking pan and bake for about 45-50 minutes.(45 minutes)
