Ingredients

  • 8 tablespoons of HerbaZest Lucuma Powder
  • 1 cup of cashew (raw)
  • 1 cup of almond milk (unsweetened)
  • 1 1/2 cups of coconut milk (full fat)
  • 4 tablespoons of honey
  • 1 teaspoon of vanilla extract
  • 16 ladyfingers
  • 1 cup of coffee (strong and cold)
  • 2 teaspoons of HerbaZest Cacao Powder (unsweetened)

Directions

Lucuma is not only a good source of fiber, vitamin B3 (niacin) and iron, but it also has a mild sweetness that helps reduce the need of sugar in many desserts, as well as a delicate flavor than goes perfectly with classic recipes like this Italian tiramisu.

  1. Put the can of full fat coconut milk in the refrigerator to chill.(30 minutes)
  2. Soak the cashews in hot water until they get soft.(2 hours)
  3. Strain the water and transfer the cashews into a blender or food processor. Mix at high speed with the almond milk, the vanilla extract and two tablespoons of the honey. Pour into a bowl and reserve in the fridge.(5 minutes)
  4. Take the full fat coconut milk can out of the refrigerator. Open it and pour the entire content into a large bowl.(1 minute)
  5. Whip the coconut cream until it gets a thicker consistence and add the lucuma powder little by little. Keep whipping until combined.(10 minutes)
  6. Take the cashews' cream out of the fridge and pour it into the whipped mixture. With the help of a spatula, combine all the ingredients until you obtain a soft cream. Reserve the bowl in the refrigerator.(5 minutes)
  7. Mix the brewed coffee with the rest of the honey in a small bowl. At this point you can add a tablespoon of coffee liquor for extra flavor. Embed one by one the lady fingers and lay them carefully at the bottom of a square pan. The lady fingers should not be soggy or they will break.(5 minutes)
  8. Take the filling from the fridge and pour part of it until covering about an inch (2.5 cm) of the lady fingers at the bottom of the pan.(1 minute)
  9. Following the same procedure, add another layer of lady fingers and cover with the filling.(6 minutes)
  10. Reserve for at least 45 minutes in the fridge. Before serving, sprinkle dark cacao powder on top of the preparation.(50 minutes)
