  • 1/2 cup of oats (old fashioned)
  • 1 teaspoon of chia seeds
  • 1/4 cup of greek yogurt
  • 3/4 cups of whole milk (or non-dairy)
  • 1/2 teaspoon of vanilla extract
  • 2 teaspoons of maple syrup (optional; or to taste)
  • Sea salt (a pinch)
  • Favorite toppings (fresh fruit, nuts, seeds, granola, quinoa pop etc.)

Directions

You've most likely tried overnight oats before. But what about these delicious blended overnight oats? By adding just one extra step, the oats become creamy and smooth, resembling a pudding or a mousse. Thanks to lucuma, they're also naturally sweet, helping you cut down on added sugar. Plus, they're rich in fiber, protein, and micronutrients.

  1. Add all of the ingredients to a blender and process until smooth.(2 minutes)
  2. Pour into a jar and store in the fridge overnight.(8 hours)
  3. Before serving, give it a stir. If it seems too dry, add a splash of milk. Garnish with your favorite toppings and enjoy!
