Ingredients

  • Shredded coconut

  • Maple Syrup

  • Vanilla extract

  • 2 cups of Shredded coconut
  • 1/4 cup of Maple Syrup
  • 1 teaspoon of Vanilla extract
  • 2 Egg whites
  • Salt (a pinch)

Directions

This light and fluffy version of coconut macaroons comes together in minutes and is packed with deliciousness. Besides its characteristic flavor, the meat from coconut is rich in fiber, fats, and antioxidants, providing a variety of health benefits.

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Place all of the ingredients, except for shredded coconut, in a glass bowl. Create a double boiler and heat up the mixture until it becomes frothy. Make sure the bottom of the bowl does not touch the water.(5 minutes)
  3. Add the coconut and mix everything to combine.(3 minutes)
  4. Scoop out a tablespoon's worth of the mixture and place is on a parchment paper linked baking sheet. Repeat with the rest of the mixture.(5 minutes)
  5. Bake for 20 to 25 minutes, or until they start to turn golden brown.(25 minutes)
  6. Set aside to cool completely. Enjoy!

For extra flavor, you may dip your coconut macaroon in melted dark chocolate.
