  • 3/4 cups of Sun-dried tomatoes (jarred in oil; drained)
  • 4 cloves of Garlic
  • 1 Onion (diced)
  • 1 cup of Spinach (chopped)
  • 8 ounces of Pasta (uncooked)
  • 2 tablespoons of Olive Oil
  • 2 cups of Whole Milk (or dairy-free)
  • 1 1/2 tablespoons of Cornstarch
  • 2 tablespoons of Nutritional yeast
  • Black Pepper (to taste)
  • Salt (to taste)


This quick and easy sun dried tomato pasta will quickly become your go-to lunch or dinner recipe. Besides antioxidants and dietary fiber from sun dried tomatoes, this pasta dish also packs high amounts of magnesium, iron, and vitamin K from spinach. It comes together in no time and is guaranteed to please your taste buds with its delicious, creamy flavor.

  1. Start by cooking pasta according to the instructions on the package.
  2. Meanwhile, make the sauce. Sauté the garlic in one tablespoon of olive oil for until fragrant and lightly browned. Then mix in the cornflour and stir everything to combine. Add in the milk, stir so that there are no lumps, and cook the mixture until it thickens.(5 minutes)
  3. Place the sauce in a blender, add the sun dried tomatoes, salt, pepper, and nutritional yeast. Process until smooth. Add about 1/4 - 1/3 cup of water to reach the desired consistency.(5 minutes)
  4. In a skillet, sauté the onions until translucent. Pour in the sauce in to the pan and mix everything to combine. Adjust the seasoning to your liking. Add a little more water if the sauce seems to thick. Add the spinach, turn of the heat, and put the lid on. Let it sit of two minutes. Then give it a mix and serve. Enjoy!(5 minutes)
