Cilantro Lime Cashew Dressing

  • 1 cup of cashews (soaked in cold water overnight)
  • 3/4 cups of cilantro (fresh leaves)
  • 2 tablespoons of lime juice
  • 1 clove of garlic (minced)
  • 2 tablespoons of nutritional yeast
  • Black pepper (to taste)
  • Salt (to taste)
  • 1/2 cup of water
  • 1/2 teaspoon of ground cumin
  • 1/4 teaspoon of ground smoked paprika


This cilantro lime cashew dressing comes together in a matter of minutes and can brighten up otherwise ordinary meals. Having a neutral flavor, cashews are a great base for homemade dressings and creams. This particular recipe has lovely cilantro and lime undertones that will go well with veggie burgers and salads. It is also thick enough to be eaten as a dip with fresh veggies.

  1. Drain the cashews and add them to a blender or food processor.(2 minutes)
  2. Add the rest of the ingredients and process until smooth and creamy.(3 minutes)
  3. Adjust the seasoning to your liking. Add a little more water if you want your dressing to be more liquidy. Then transfer to a glass container for storage. Enjoy!
