Chocolate Peanut Butter Date Cups with Amaranth Crispies

Ingredients

  • 4 dates
  • 8 teaspoons of peanut butter
  • 1/2 cup of HerbaZest Amaranth Crispies
  • 1 cup of dark chocolate chips
  • 1 teaspoon of coconut oil

Directions

Rich, chewy, and crunchy in every bite, these treats provide protein, healthy fats, and fiber from peanuts and amaranth, along with cacao's antioxidants. Naturally sweet dates pair with creamy peanut butter, while the crisp bite of amaranth makes them both wholesome and indulgent.

  1. Slice each date in half lengthwise and carefully remove the pit. Place one half at the bottom of each cavity in a silicone mold, pressing it down gently so it lays flat and forms the base layer.(3 minutes)
  2. Place a teaspoon of peanut butter over each date, spreading it evenly.(2 minutes)
  3. Melt the dark chocolate chips and coconut oil. Then stir in the amaranth crispies.(2 minutes)
  4. Spoon the thick chocolate–amaranth mixture over the peanut butter layer, spreading it gently with the back of a spoon (or spatula) until fully covered.(1 minute)
  5. Refrigerate until set.
