  • 1 1/2 cups of HerbaZest Amaranth Crispies
  • 1 carrot (medium, shredded)
  • 1 cup of walnuts (roughly chopped)
  • 1 cup of almonds (roughly chopped)
  • 1/2 cup of sunflower seeds
  • 1/2 cup of shredded coconut
  • 1/2 cup of Pumpkin seeds
  • 1/4 cup of ground flax seeds
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of ground ginger
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of salt
  • 1/2 cup of olive oil
  • 1/2 cup of maple syrup
  • 1/2 cup of peanut butter
  • 1 teaspoon of vanilla extract

Directions

This carrot cake granola delivers wholesome crunch in every spoonful. Seeds, peanuts, coconut, and amaranth provide healthy fats, protein, and fiber for lasting energy, while cinnamon, nutmeg, and ginger recreate the comforting flavors of classic carrot cake.

  1. Preheat oven to 320°F (160°C).
  2. Mix all dry ingredients in a large bowl, leaving out the amaranth crispies. Add in the shredded carrot and stir well.(5 minutes)
  3. Warm the wet ingredients in a pot over low heat until combined, then pour over dry mix and stir until coated.(5 minutes)
  4. Spread evenly onto baking sheets and press down firmly.(3 minutes)
  5. Bake for 25-30 minutes, then stir in amaranth crispies and bake 10 minutes more, until golden and crisp. Watch closely to prevent burning.(40 minutes)
  6. Remove from oven, let cool completely, then store in an airtight container.
