- Preheat oven to 320°F (160°C).
- Mix all dry ingredients in a large bowl, leaving out the amaranth crispies. Add in the shredded carrot and stir well.(5 minutes)
- Warm the wet ingredients in a pot over low heat until combined, then pour over dry mix and stir until coated.(5 minutes)
- Spread evenly onto baking sheets and press down firmly.(3 minutes)
- Bake for 25-30 minutes, then stir in amaranth crispies and bake 10 minutes more, until golden and crisp. Watch closely to prevent burning.(40 minutes)
