Brown Rice Risotto with Mushrooms and Dill

Ingredients

  • 1 1/3 cups of brown rice (short grain)
  • 2 garlic (minced)
  • 1 onion (chopped)
  • 3 tablespoons of olive oil
  • 12 ounces of cremini mushrooms (sliced)
  • 1 teaspoon of salt (or to taste)
  • 5 cups of water (or vegetable broth)
  • Black pepper (to taste)
  • 1/4 cup of nutritional yeast
  • 1/4 cup of dill (fresh, chopped)

Directions

This brown rice risotto is a delicious complement to a healthy lunch or a nutritious dinner. It's packed with great flavor and wholesome ingredients, like fiber-rich brown rice and copper-rich Cremini mushrooms. This flavorful risotto is also enhanced with aromatic and nutritious dill.

  1. Start by sauteing the onions and the garlic until translucent.(5 minutes)
  2. Add the Cremini mushrooms and cook them until they have soaked up their juices, stirring occasionally.(10 minutes)
  3. Add the rice and give it a mix. Then add the water or vegetable broth, salt, pepper, and nutritional yeast. Give the mixture a stir. Put the lid partially on the pan and cook it on medium-low heat until the rice is soft and the water absorbed. Stir the mixture every now and then to prevent sticking. Add more water or broth if needed.(30 minutes)
  4. Take of the stove and add the dill. Enjoy!
