  • 1 cup of blueberries
  • 1/2 cup of plain yogurt
  • 1/2 cup of milk
  • 1 cup of whole-wheat flour
  • 1 tablespoon of sugar
  • 2 teaspoons of baking powder
  • Salt (a pinch)
  • 2 tablespoons of unsalted butter (melted & cooled + for frying)
  • 2 chicken eggs

Directions

Making pancakes from scratch is a delicious way to start your day. It also gives you full control over the ingredients you use, allowing you to choose pure and nutritious options like acai, whole wheat, blueberries, and yogurt. As a result, these flavorful pancakes are packed with protein, healthy fats, and fiber to help you stay well nourished throughout the day.

  1. In a bowl, whisk together the yogurt, milk, butter, and eggs.(3 minutes)
  2. Whisk in the flour, acai powder, sugar, baking powder, and salt.(3 minutes)
  3. Mix in the blueberries.(2 minutes)
  4. Heat a small amount of butter in a large skillet over medium heat, spoon out about 1/4 cup of the batter, and cook the edges are set and small bubbles start to form (3-4 minutes). Then flip them over and cook them for 3 more minutes.(10 minutes)
  5. Serve with yogurt, jam, peanut butter, or other favorite toppings. Enjoy!
